Goulash Soup
Gulyás Leves is a warming traditional Hungarian soup. We make it with beef, but you can leave out the meat for a vegetarian version called Hamis Gulyás (“fake goulash”). The soup freezes well.
Ingredients for four hearty portions:
1 lb (450g) cubed stewing steak
1 onion, chopped
2 tablespoons vegetable oil or lard
2 cloves garlic, finely chopped
1 tablespoon sweet paprika
2 carrots, sliced
1 large potato, peeled and cubed
1 red pepper
2 tomatoes, chopped
1 litre beef or vegetable stock
1-2 bay leaves (optional)
Instructions
In a large pot, soften the onion in some vegetable oil or lard. Remove the pot from the heat briefly and add the paprika. We don’t want the paprika to burn, which is why we coat the onions with it off the heat. Add the garlic, stewing steak, some salt and pepper, and stir until the meat is browned. Add all the other ingredients and simmer gently for an hour or so until the meat is tender. Serve hot with crusty bread –
